RECIPE FOR TARTE TATIN OF CHERRY TOMATOES

FOR 4 PERSONS

1 ROLL OF PUFF PASTRY
5 TABLESPOONS POWDERED SUGAR
3 TABLESPOONS BALSAMIC VINEGAR
40 CHERRY TOMATOES

50g PARMESAN
30g BUTTER
SALT, FRESHLY GROUND PEPPER
1 “MANQUE” MOLD

Preheat oven to 200 °C

Melt butter in pan directly over medium heat

add 3 tablespoons of sugar and vinegar. Stir until mixture becomes syrupy

add tomatoes

Let simmer 5 minutes sprinkling with the rest of the sugar, salt and pepper

Cool a few minutes

Spread the Parmesan shavings

Cover with dough the tomatoes, folding the dough around the inside edge of the mold

Prick with a fork and bake approximately 20 minutes

Turn the pan upside down onto a large plate

Serve with a Tavel Domaine de la Mordorée (10 to 12° C ideal serving temperature)
