
50g PARMESAN
30g BUTTER
SALT, FRESHLY GROUND PEPPER
1 MANQUE MOLD
Preheat
oven to 200 °C
Melt
butter in pan directly over medium heat
add
3 tablespoons of sugar and vinegar. Stir
until mixture becomes syrupy
add
tomatoes
Let
simmer 5 minutes sprinkling with the rest of the sugar, salt and pepper
Cool
a few minutes
Spread
the Parmesan shavings
Cover
with dough the tomatoes, folding the dough around the inside edge of
the mold
Prick
with a fork and bake approximately 20 minutes
Turn
the pan upside down onto a large plate
