Grandeur Nature … Our vocation is to allow the terroirs to express themselves freely through the different grape varieties. We remain convinced that nature is much better endowed than man and that our role is above all to avoid drift. Our wines highlight, without artifice, all the subtleties of the unique terroirs of the Rhone Valley.
We leave the natural yeasts present in our terroirs to do the work. We simply monitor the evolution of the fermentation by regular checks and analyzes carried out by an external oenologist.
In so doing, it is completely forgotten that the important thing is the grapes and that in its pulp, its skin, and its seeds there is everything needed to produce great wines, provided of course that these Grapes are perfect. That is why our efforts and investments are primarily focused on vineyards.
Having perfectly ripe and healthy grapes allows the terroirs to dominate the technology and to express all their complexity. This is obviously the major asset of great wines.
Winemaking of course has a real importance, because it is that which gives its style to the wine and it is at this time that the man can print his mark. This conjunction will make a wine unique and unlike any other. It is also one of the great strengths of Domaine de la Mordorée because our wines have a lot of personality and are easily recognizable. We try to have very concentrated wines whose tannins are perfectly melted in a very dense matter, full of fruit, delicious to drink young, but which can also be kept very long, expressing over the years the breed of their terroirs. We are very far from these wines whose style is printed by technology and that look alike.
Finally, with regard to winemaking, everyone has their little secrets. As Winston Churchill said: “Keep your secrets secret! Or from a free translation “that your secrets remain what they are: secrets! “. Therefore we will not say more!
